Memorial Day is this weekend which mean the official kick off to summer and I couldn’t be more excited! Even though I don’t appreciate the 90 plus degree days in my near future, I love the bright colors, ice cold cocktails and vibrant flavors associated with summer.
Today I’m sharing a festive prickly pear margarita recipe inspired by a cocktail I made for an event at Elaine Turner last month. If you haven’t tried anything prickly pear flavored before, don’t let the bright pink color fool you. I promise it’s not overly sweet!
This recipe is super easy – you probably have most of the ingredients in your liquor cabinet and you can pick up prickly pear syrup or juice at your local liquor store. There’s a link below if you want to order the syrup via Amazon Prime and have it just in time for your Memorial Day festivities!
Serves four
4. Once the glasses are salted (you can leave this step out if you prefer no salt), fill the glass 3/4 to the top with crusted ice. Add a lime slice as a garnish and pour the prickly pear margarita mixture evenly in each glass.
Chicken Enchiladas – The orange and coriander flavors in the margaritas pair well with the spicy and savory flavors of chicken enchiladas.
Mexican Rice – A mild, but flavorful side dish that won’t overpower the other flavors on the table.
Papas Con Chorizo – Mix up this combination to make a Mexican-style
Shrimp Tacos – The margaritas’ orange flavor pairs nicely with the shrimp, while the salty tacos offer a contrasting bite.
Tortilla Chips – Serve saltier tortilla chips to balance out the sweetness of these drinks.
