Y’all know I’m all about celebrating life’s sweet moments, so National Ice Cream Month in July is a foodie holiday I’m totally on board with! I’ve shared my love for I Love Ice Cream Cakes before, and if you look in our freezer during the summer, you’ll absolutely find at least one in there. They’re always a hit in our house for celebrations big and small.
Today we’re celebrating with a Carvel ‘Lil Love Ice Cream Cake and the cutest cone cake toppers! I’m pretty proud of myself for this project; I tried several different ideas before figuring out an easy way to make mini ice cream cones!
Cut the cones slowly about two inches from the tip of the cone. Then you’ll take a ball of fondant and flatten it like a pancake. When you have a flat circle about the size of your palm, you’ll cover the truffle with it and use the excess on the bottom to attach the cone to the fondant. Then you’ll shape the fondant to look like a scoop of ice cream!
Heat the candy melts according to the package, then spoon some on top of the fondant. Allow it to dip on the sides to look more realistic, then add sprinkles and red candy as a cherry. Place the cone on the dry rack to harden.
After a few minutes, you can place them on top of your favorite cake from I Love Ice Cream Cakes!
