Both Trent and I come from a long line of football fans, so there’s always either a college football bowl game or professional playoff game on TV this time of year! I’m down to watch football if my favorite teams are playing but other than that, I’m just in it for the snacks. Anyone else?! I love anything I can throw together hours before and set out when it’s game time, and this corn dip recipe has been a favorite for tailgating and game-watching parties for as long as I can remember. I can’t tell you how many times our friends have asked for the recipe. It’s addicting, I promise!
2 (11oz.) cans of drained Mexican corn
1 (8oz.) package of shredded cheddar cheese
1 small can of chopped green chilis
1 cup light mayo
1 cup greek yogurt (you can also use sour cream)
4 green onions chopped
1-1/2 tsp jalapeños
1 tsp sugar
1 tsp pepper
1 tsp salt
Mix together all ingredients. You want to make and refrigerate for at least 12 hours before serving to allow all the flavors to mix.
