We were at brunch on Sunday with friends and fried brie was the first item on the menu. Of course we had to try it, I mean what’s not to love about fried cheese?! For the record, it delicious but my wheels immediately started turning for a way to recreate a lighter version at home. For this recipe I opted for Harvest Snaps instead of breadcrumbs and I baked them instead of frying. The mini brie rounds are the perfect portion size and won’t spoil the meal. Plus it’s super easy to pull together in 30 minutes or less!
Baked Brie Bites & Cranberry Sauce
2 packages of mini brie rounds from Trader Joe’s
2 cups of Harvest Snaps Black Pepper flavor
2 eggs
Cranberry sauce (I used store bought but you can make your own)
Whole cranberries for garnish
Crostinis or crackers to serve
Directions: Preheat the oven to 350 degrees. Use a food processor to grind up the Harvest Snaps into a fine powder similar to breadcrumbs then pour the mixture onto a plate. Crack the two eggs into a small dish and mix with a fork until well combined. Then you’ll take the unwrapped mini brie bites dip into the egg wash and roll in the Harvest Snaps crumbs and place on a cookie sheet. Repeat until all the brie bites are covered. Bake for 12-15 minutes or until crumbs are slightly golden or cheese starts to bubble.
Once the brie bites slightly cool put them on a platter and serve with cranberry sauce and crackers or crostinis. Enjoy!
